1 ounce vegan chocolate chips
2 tbsp vegan butter
1 cup powdered sugar
1/4 tsp vanilla extract
1 tbsp + 1/2 tsp soy milk
Melt chocolate and margarine in a double boiler. Whisk until smooth.
Beat melted chocolate mixture, powdered sugar, vanilla, and milk until smooth and spreadable.
Yields frosting for 6 cupcakes.
