Vegan Carrot Cake Ice Cream

13.5oz can coconut milk (1 3/4 cups)
3 bananas
1/4 cup dark rum
3 packets stevia
2 tbsp sugar
1 tsp vanilla
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp salt
1 cup grated carrots
1/4 cup chopped walnuts
1/4 cup raisins

Blend coconut milk, bananas, rum, stevia, sugar, vanilla, cinnamon, ginger, salt, and process in ice cream maker according to manufacturer's instructions. Stir in carrots, walnuts, and raisins.
